Ingredients
- Beef Brisket
- 1/3 cup chili powder
- 1/3 cup smoked paprika
- 2 tblsp granulated garlic
- 1 tblsp ground cumin
- 1 teas finely ground cayenne pepper
- 1/2 cup kosher salt
- 2/3 cup dark brown sugar
- 3 tblsp granulated sugar
- 1/3 cup finely ground dark roast coffee

Preparation
Step 1
1. Combine chili powder, paprika, garlic, cumin and cayenne pepper in a small bowl and set aside.
2. Combine the sugar and salt in a food processor and pulse to combine. Add the spcies one quarter at a ime, pulsing the mixture after each adition. Slowlya dd in the coffee.
3. Apply 2 tblsp rub mixture per pound of meat, rubbing generously onto the meat. Let meat marinate, covered, overnight in the refrigerator before grilling or smoking.
4. The standard cooking time for brisket is about an hour per pound, fat side up, under dry indirect smoke at a steady temperature of 190 degrees.
