Irena’s (spur of the moment) Chicken, Kale & Wild Rice Soup 0 Picture

Ingredients

  • In a Food Processor add:
  • 1 large chicken breast
  • 2-3 Carrots
  • 1 medium onion (or a few small ones)
  • A few cloves of garlic
  • Chop all of the above very fine and sauté with a few glugs of olive oil in a large soup pot (season with salt & pepper)
  • In a Food Processor pulse:
  • 2 pints of cherry tomatoes (Pulse until fine) and add to pot
  • Then add 1 small can of tomato paste
  • A few springs of Rosemary finely chopped
  • 2 quarts of Chicken Broth (or water)
  • 1 bunch of Kale finely chopped or whizzed through the Food Processor
  • 1 whole lemon, sliced very then

Preparation

Step 1

Bring pot to a boil and add 1 ½ cups of Wild Rice……cover pot and turn down to a simmer and cook for 30 minutes
