Ingredients

  • 1 medium onion, medium dice
  • 2 ribs celery, chopped
  • 1 carrot peeled and chopped
  • 2 tablespoons extra virgin olive oil
  • 4 cups peeled, seeded and chopped hard squash (butternut, acorn, etc)
  • 1 tablespoon mild curry powder
  • 4 1/2 cups water
  • 1 can coconut milk
  • 3 tablespoons maple syrup
  • salt and pepper to taste

Preparation

Step 1

Saute onions, celery and carrots in olive oil for approximately 5 minutes or until soft. Add squash and coat with juices. Add curry powder and distribute well. Add water and bring to a simmer making sure to stir bottom of pot. Let cook till squash becomes soft. When squash is soft add coconut milk and maple syrup. Blend with blender or use an immersion blender till smooth. Salt and pepper to taste.
