Ingredients
- 2 Eggs, lighly beaten
- 1 c. Picanted, divided
- 8 oz. Kidney Beans, rinsed and drained
- 1 can (11 oz) Mexicorn
- 1 medium Onion
- 1 can (2 oz) ripe Olives
- <½ c. Bread Crumbs
- <1 envelope Taco Seasoning
- ½ tsp. ground Cumin
- ½ tsp. Chili Powder
- 1 lb. Ground Beef
- 1 c. (4 oz) Cheddar Cheese

Preparation
Step 1
In a large Bowl, combine Eggs, ½ c. Picante Sauce, Beans, Corn, Onion, Olives, Bread Crumbs, Taco Seasoning, Cumin, and Chili Powder. Crumble beef over and mix well.
Pat into ungreased 9x5x3 in. loaf pan. Bake uncovered at 350º for 50-55 minutes or until no pink remains.
Spoon picante sauce over meat loaf. Sprinkle with cheese. Bake 10-15 minutes or until cheese is melted. Let stand 10 minutes before slicing. Serve with additional picante sauce.
