Ingredients

  • 1 medium onion, chopped
  • 1/2 cup chopped celery
  • 1 tbsp cooking oil
  • 6 oz package of sweetened dried cranberries (1-1/2 cups)
  • 6 cups coarse dry bread crumbs
  • 2 tsp parsley flakes
  • 2-3 tsp poultry seasoning
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 large eggs, fork beaten
  • 3/4 cup water
  • 1/3 cup hard margarine, melted

Preparation

Step 1

Saute onion and celery in cooking oil in frying pan until onion is soft and clear.

Combine next 6 ingredients in large bowl.

Add eggs and wter. Stir. Add onion mixture. Mix well. Shape into 10 balls using 1/2 cup mixture each. Arrange in single layer in small greased roasting pan.

Drizzle with margarine. Cover. Bake in 350 oven for about 25 minutes until golden.
