Hash browns make the crust with an egg and cheese topping. An excellent brunch dish.

Ingredients
- 6 bacon slices, diced
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 2 cups frozen hash brown potatoes, thawed
- 4 large eggs
- 1/4 cup water (or milk)
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup grated medium cheddar cheese
- 1/2 cup grated part-skim mozzarella cheese

Step 1
Saute bacon, onion and green pepper in large non-stick frying pan until bacon is golden. Remove with slotted spoon to paper towel to drain. Drain fat from frying pan, reserving 1 tbsp in pan.
Pack hash browns into frying pan in even layer. Cook, uncovered, on medium-low, without stirring, until crispy on bottom.
Beat eggs, wataer, salt and pepper together in small bowl. Add bacon mixture. Stir. Pour over hash browns.
Sprinkle with both cheese. Cover. Cook for about 5 minutes, without stirring, until eggs are set. Cuts into 4 wedges.
