- 3 Tbsp margarine or butter
- 3 Tbsp all purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 1/2 cups milk
- 6 cups thinly sliced potatoes (abut 6 medium)
- 1 small onion, finely chopped (about 1/4 cup)
- 1 1/2 cups cubed fully cooked smoked ham
- 1 Tbsp margarine or butter

Step 1
Heat oven to 350. Grease 2 qt casserole. Heat 3 Tbsp margarine in 1 1/2 qt saucepan over low heat until melted. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Layer 1/3 of the potatoes, 1/2 of the onion and ham and 1/3 of the white sauce in casserole, repeat. Top with remaining potatoes and white sauce. Dot with 1 Tbsp margarine. Cover and bake 30 minutes. Uncover and bake 60 to 70 minutes or until potatoes are tender. Let stand 5 to `10 minutes before serving.
