Ingredients
- 1/4 pound bulk chorizo sausage
- Vegetable oil as needed
- 1 small onion, chopped
- 1 tablespoon butter
- 3 eggs
- 1 tablespoon water
- Salt to taste
- Salted tortilla chips
- 6-8 ounces mild cheddar cheese, grated
- 1 small tomato, preferably Roma, chopped
- 1-2 fresh or pickled jalapenos, sliced; see cook's notes
- Cook's notes: Use caution when working with fresh chilies; wash work surface and hands thoroughly upon completion and do NOT touch face or eyes

Step 1
1.Heat oven to 350 degrees. In large, deep skillet, cook chorizo over medium heat. Remove chorizo with slotted spoon; drain on paper towels. Add a little oil to skillet if chorizo drippings don't lightly coat surface. Reduce heat to medium-low and add onion. Cook onion until softened, about 10 minutes. Remove from heat and set aside.
2.Place butter in shallow, medium baking dish and melt butter in oven.
3.In bowl, whisk eggs with drained chorizo, water and salt. Remove baking dish from oven and pour egg mixture into warm dish. Top eggs with enough chips to make a single, dense layer. Scatter onions and cheese over chips.
4.Bake 5 to 8 minutes or until eggs are set lightly and cheese is melted. Top with tomato and jalapeno. Serve immediately.
