Ingredients

  • 3

    pounds chicken breast

  • 1

    medium onion, chopped

  • 1

    cup chopped celery

  • 1

    small green bell pepper, chopped ( I leave these out)

  • 2

    tablespoons margarine

  • 2

    10-ounce cans cream of chicken soup

  • 2

    10-ounce can chopped tomatoes with

  • green chilies ( we used a pt. of tomatoes

  • and our own green chilies)

  • 1

    4 ounce jar sliced mushrooms (We used

  • fresh ones)

  • 1

    pound Velvetta cheese, cubed

  • 1

    10-ounce package spaghetti

  • ½

    cup sliced green olives

Directions

Preheat oven to 325 . Cook chicken breast in water to cover until done. I used the pressure cooker. Remove chicken breast and reserve broth. Sauté' onion, celery and bell pepper in margarine until tender. Add soup, tomatoes and mushrooms and simmer for 25 minutes. Stir in cheese. Meanwhile cook the spaghetti using the chicken broth. Drain when done. Add chicken and spaghetti to vegetable mixture, add green olives. Put in a greased baking dish and bake for 30 minutes or until bubbly.
