Ingredients

  • Salad Dressing:
  • 4 large russet potatoes, preferably red
  • 1 zucchini, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 1 red pepper, cut into chunks
  • 8 mushrooms, cut in half
  • 1 red onion, cut into chunks
  • 1 tbsp extra-virgin olive oil
  • 3 mild Italian sausages
  • 1/3 cup shredded fresh basil
  • 1 clove garlic, minced
  • Juice from 1 lemon
  • 2 tsp Dijon mustard
  • 1/2 jalapeno pepper, seeded and finely chopped or 1/2
  • tsp hot chili flakes
  • 1/3 cup extra-virgin olive oil
  • Salt and freshly ground pepper

Preparation

Step 1

Drizzle vegetables lightly with olive oii and BBQ. BBQ sausages and slice. Mix dressing and pour over rest of ingredients. Sprinkle with shredded basil and serve.
