Ingredients
- Salad Dressing:
- 4 large russet potatoes, preferably red
- 1 zucchini, cut into chunks
- 1 yellow pepper, cut into chunks
- 1 red pepper, cut into chunks
- 8 mushrooms, cut in half
- 1 red onion, cut into chunks
- 1 tbsp extra-virgin olive oil
- 3 mild Italian sausages
- 1/3 cup shredded fresh basil
- 1 clove garlic, minced
- Juice from 1 lemon
- 2 tsp Dijon mustard
- 1/2 jalapeno pepper, seeded and finely chopped or 1/2
- tsp hot chili flakes
- 1/3 cup extra-virgin olive oil
- Salt and freshly ground pepper

Preparation
Step 1
Drizzle vegetables lightly with olive oii and BBQ. BBQ sausages and slice. Mix dressing and pour over rest of ingredients. Sprinkle with shredded basil and serve.
