Oatmeal Chocolate Chip Cookies - Paradise Bakery

This is an excellent imitation of the Paradise Bakery Oatmeal Chocolate Chip Cookies. I was a store manager for Paradise Bakery in the early 90's and this recipe is as close as it gets.

Ingredients

• 1 cup butter, softened to room temperature
• 1 cup packed light brown sugar
• 1/2 cup white sugar
• 2 eggs
• 2 tsp vanilla
• 1 1/4 cups all purpose flour
• 1/2 tsp baking soda
• 1 tsp salt
• 3 cups old fashioned oats
• 1 cup semisweet chocolate chips

Preparation

Step 1

Preheat oven to 325 degrees.

1. In a large mixing bowl, cream together the butter and all the sugar. While mixing, add eggs, one at a time. Add vanilla.

2. In another bowl, mix flour, baking soda and salt. Add the dry ingredients to the mixing bowl. Add the oats and mix until just incorporated. Stir in the chocolate chips by hand.

3. Bake for 12-14 minutes.
