- 4 oz. semi or bittersweet chocolate
- 1 stick butter (1/2 cup)
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup unsweetened cocoa powder

Step 1
Pre-heat oven to 375 degrees F. Butter 8” round spring form pan and line bottom with waxed or parchment paper. Combine chocolate and butter in pan, melt on low, then whisk until smooth. Whisk in sugar until it dissolves. Then add eggs, beating quickly so they don’t cook. Sift in cocoa powder and whisk to incorporate. Pour into pan and bake 20-25 minutes, until top has formed a thin crust. Remove to rack and cool 5 minutes. Loosen edges with knife and invert over serving plate. Enjoy.
