Ingredients

  • 2 1/2 cups flour
  • 1 1/4 cup milk
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup packed brown sugar
  • 1 T. plus 1 t. grated orange peel
  • 3 1/2 t. baking powder
  • 1 cup chopped dried apricots
  • 1 t. salt
  • 1 cup chopped nuts
  • 3 T. vegetable oil

Step 1

Heat oven to 350 degrees. Grease bottom only of a large loaf pan or two small loaf pans. Mix all ingredients and beat 30 seconds. Pour into pan(s). Bake until toothpick inserted in center comes out clean, about 55 to 65 minutes. Cool slightly and loosen sides of bread from pan and remove. Cool completely before slicing.
