  • 1/4 c. maple syrup
  • 3 tbsp. minced shallots (about 1 medium)
  • 2 tbsp red wine vinegar
  • 1 tbsp canola oil
  • 1 tbsp country-style Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 garlic clove, minced
  • 1 cup sliced mushrooms
  • 1/2 c. vertically sliced red onion
  • 1/2 c. chopped Braeburn apple
  • 4 slices bacon, cooked and crumbled
  • 1 (10-oz) pkg fresh spinach
