Ingredients

  • 1 large ripe avocado
  • 1/4 cup + 2 T dutch processed cocoa and extra for dusting
  • 1/4 cup powdered sugar or sugar substitute, per your dietary needs (See Homemade Powdered Sugar Substitute)
  • 1/4 cup chopped pumpkin seeds for rolling (optional. Please use Soaked and Dehydrated Seeds.)

Preparation

Step 1

1. If you are using pumpkin seeds, chop in a food processor until a crushed “nut” consistency. Set aside. Clean processor. (You could also skip the cleaning and have a crunchier inside for your truffles.)
2. Puree avocado in processor until smooth. Add in sugar and cocoa powder and mix until blended.
3. Using a cookie scoop, gently drop and roll balls into coating of choice.
4. Serve and enjoy right away.
These are great right from the bowl.
If you won’t be enjoying them right away, chill in the refrigerator in an airtight container. Due to the perishability of avocado, I would recommend enjoying them within an hour of pureeing, if not freezing. Coat right before serving.
