Chicken Parmesan Sandwiches

Ingredients
- 1/4 C fine unseasoned breadcrumbs
- 1/4 C plus 4 tsp grated Parmesan cheese
- 3/4 tsp dried oregano
- 1/4 tsp pepper
- 4 chicken cutlets
- 1/4 C olie or other vegetable oil
- 4 Kaiser or other hard rolls, cut in half
- 1/4 C mayonnaise
- 4 lettuce leaves
- 2 medium plum tomatoes, sliced

Preparation
Step 1
IN plastic or paper bag, combine breadcrumbs, 1/4 C Parmesan, oregano and pepper. Add chicken cutlets, toss to evenly coat.
In large skillet, heat 3 T oil over hedium-high heat until hot. Add chicken; cook, turning once, until cooked through, about 4 to 6 minutes; add remaining 1 T oil as needed. Remove chicken and keep warm.
While skillet is still hot, place one half of each roll in skillet to absorb somoe of flavoured oil.
To srve, spread the other half of each roll with mayo, top wth lettuce, chicken cutlet, tomato slices and remaining Parmesan cheese.
