Ingredients
- 4 cups chicken stock, divided
- 1 bay leaf
- 2 cups white rice
- 1 Tbsp. olive oil
- 1 lime, zested and juiced
- 1/2 tsp. salt
- 1 cup cilantro leaves
- 1 sack baby spinach (10 ounces)
- 4 green onions, coarsely chopped

Step 1
Heat 3 1/2 cups stock in a saucepan with a bay leaf to boiling. Add the rice, cover the pot and reduce the heat to low and simmer 18 minutes until tender.
Place the cilantro, spinach, green onions, lime juice, lime zest, 1/2 cup stock, 1/2 teaspoon of salt and a tablespoon of oil in a food processor and process into coarse green paste. Stir the green paste into your rice just before serving.
