Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp salt
  • 4 oz cold butter, in pieces
  • 1/2 c grated white cheddar cheese
  • pinch black pepper
  • 1/4 c buttermilk
  • 1/4 c cream
  • 1 egg
  • 2 tbsp water or cream

Step 1

Combine all dry ingredients together in a bowl. Work in the butter with fingertips or a pastry cutter to small beads. Toss in the cheese. Add buttermilk and cream and work gently to combine, but still keep dough shaggy. Pour mixture onto a sheet of plastic wrap, bring together until it holds, wrap and chill at least 30 minutes.
Roll out dough on floured surface to about 8 by 12 rectangle. Fold over in half. Roll out again to 8 by 12, then cut into squares or rounds. Set on parchment lined baking sheet. Whisk egg and water or cream together and brush on top of biscuits. Bake at 350 for 25-30 minutes. Can sprinkle with salt, sugar or cheese before baking.
