Ingredients

  • 1 lb - scallops
  • 1/2 cup - white wine
  • 1 - small onion
  • pinch - parsley

  • 3 tbsp - butter
  • 1 cup - sliced mushrooms
  • 1 tbsp - flour
  • 2 tbsp - lemon juice
  • salt and pepper

  • 10 oz - shrimp soup
  • shrimp to taste
  • 1 - egg yolk
  • 1/3 cup - 35% whipped cream
  • 1/4 cup - butter
  • 1 cup - cubed bread
  • 1/2 cup - parmesan cheese
  • paprika

Preparation

Step 1

A - Bring wine, parsley and onion to a boil. Add scallops and simmer 5 minutes. Drain and set liquid aside.

B - Cook mushroom in butter, add flour, salt and pepper then boil for a little while. Add lemon juice and 1/2 of liquid from A. Bring to a boil then simmer until smooth,

C - Add soup, egg yolk and cream then scallops and shrimp. Keep warm.

Brown bread in butter then mix with parmesan cheese and paprika.

Pour St-Jacques in shells then garnish with croutons. (As an alternative, use mashed potatoes around the rim of the shells). Broil in the oven for 5 minutes.
