Sausage (Chorizo?) Stuffed BBQ Pork Tenderloin

- 1/2 lb. pork sausage
- 1/2 cup finely chopped onion
- 1/2 (8 oz) pkg. cream cheese
- 1/2 cup plus 2 Tbsp. BBQ sauce, divided
- 1 (32 oz) pkg. pork tenderloin

Step 1
Preheat oven to 375 degrees. Line a rimmed baking sheet with foil.
In a small skillet, cook sausage and onion over medium, heat until sausage is browned and crumbly. Stir in cream cheese and 2 Tbsp. BBQ sauce; cook for 4 minutes or until cream cheese melts and mixture is well combined. Set aside to cool.
Butterfly tenderloin. Spread sausage mixture down center of tenderloin. Roll up, jelly-roll style, and tie at 2" intervals with kitchen string. Place, seam side down, on prepared baking sheet. Brush with 1/4 cup BBQ sauce.
Bake for 35 minutes or until thermometer registers 145 degrees. Let stand 10 minutes. Remove string, and brush with remaining 1/4 cup BBQ sauce.
