  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup grated gruyere cheese
  • kosher salt, to taste
  • fresh ground white pepper, to taste

Preparation

Step 1

1 Melt butter in small saucepan over medium-low heat. 2 Add flour; stir 2 minutes (do not brown). 3 Gradually whisk in 1 1/2 cups milk. 4 Increase heat to high; bring to boil, then reduce heat to medium and simmer until mixture is thickened, stirring constantly, about 4 minutes. 5 Remove from heat. 6 Add cheese, stir until melted. 7 Season with salt and pepper. 8 Do Ahead: This cheese sauce can be made 2 hours ahead. 9 Let stand at room temperature. 10 Rewarm before using, adding more milk if sauce is too thick.
