Ingredients
- Dressing:
- 5 lbs potatoes, cooked, peeled and diced
- 2 hard-cooked eggs, chopped
- 1/4 C thinly sliced green onions
- 1/4 C finely chopped green or sweet red pepper
- 1/4 C minced fresh parsley
- 1 small garlic clove, minced
- 6 slices bacon, cooked and crumbled
- 1 tsp celery seed
- 1 tsp dill weed
- 1 tsp salt
- 1/2 tsp ground pepper
- 3/4 C mayonnaise
- 2 T sour cream
- 1 tsp harseradish
- 1 tsp Dijon mustard
- pinch oregano
- pinch chives

Preparation
Step 1
In a large salad bowl, combine first 11 ingredients. Set aside. In a small bowl, combine all dressing ingredients. Pour over potato mixture; toss to coat. Cover and refrigerate for up to 24 hours.
