Ingredients
- 1 lb pasta
- 2 T olive oil
- 3 cloves garlic, crushed
- 2 T chopped fresh parsley
- 1/4-1/2 tsp chilli flakes
- 2 x 14 oz cans chopped tomatoes
- 1 T capers
- 3 anchovy fillers, thinly sliced
- 1/4 C black olives
- freshly grated Parmesan, for serving

Preparation
Step 1
Cook pasta until al dente. Drain and return to pan and keep warm.
While pasta is cooking, heat the oil in a large heavy-based frying pan. Add the garlic, parlsey and chilli flakes and stir constantly, for about 1 minutes, over medium heat.
Add the tomato to the pan and bring to boil. Reduce heat and simmer, covered for 5 minutes.
Add the cpaers, anchovies and olives and stir for another 5 minutes. Season, to taste, with blak pepper. Add the sauce to the pasta and toss gently until the sauce is evenly distributed. Serve immediatley, with Parmesan.
