  • 3 cups water
  • 1 1/2 cups grits
  • 1/2 tsp. salt
  • white soda crackers

Step 1

Bring water to a boil over high heat; add grits and salt. Lower heat, stir constantly about 5 minutes or until fairly dry. Pour into a rectangular dish and chill overnight.

Mash crackers into fine crumbs. Slice grits 1/4 inch thick and roll in crumbs. Fry in heavy skillet in 1/4 inch hot butter or vegetable oil about 7 minutes, turning once. Drain on paper towel. Serve with syrup or sprinkle with cinnamon sugar.
