Ingredients

  • 1 lbs. elbow macaroni
  • 1 tbsp. bacon grease
  • 3 tbsp. blour
  • 1 1/2 cup milk
  • 2 cups cheese, pepperjack, cheddar, white cheddar or your choice
  • 4 oz. cream cheese
  • 3 tbsp. butter
  • salt and pepper to taste

Step 1

Cook pasta until al dente, about 7 minutes, drain.

In a saucepan put bacon grease and melt 2 tbs butter over medium heat. Stir in the flou with a wooden spoon until smooth. Whisk in the milk, and stir until thick, about 2 minutes. Whisk in the cheese, then whisk in the cream cheese untl smooth. The cream cheese keeps the pasta moist. You can cook the bacon to make the grease and then crumble the bacon in with the pasta should you choose to do so. Mix cheese mixture and pasta together.
