- 1 quart buttermilk
- 1.5 tsp poultry seasoning
- 2 tbsp plus 2 tsp salt
- 1 tsp pepper
- 3.5 lbs chicken
- 4 c rice krispies

Step 1
In a large glass bowl, whisk together buttermilk, poultry seasoning, salt and pepper. Submerge chicken in buttermilk, cover, and refrigerate 3 hours or overnight.
Preheat oven to 425. Place an ovenproof rack on a baking sheet. In a food processor, pulse cereal until coarse crumbs. Transfer to a wide shallow dish. One piece at a time, lift chicken from buttermilk, let excess drip off, and roll in crumbs, l ightly pressing to stick. Arrange pieces on rack, not touching, and bake until golden 30-35 minutes.
