Ingredients

  • Crust:
  • 6 tbsp. hard margarine
  • 1 1/2 c. graham cracker crumbs
  • 1 tbsp. sugar
  • Filling:
  • 2 1/2 c. creamed cottage cheese, smoothed in blender
  • 1 c. sugar
  • 1/4 c. flour
  • 4 oz. light cream cheese, softened
  • 2 large eggs
  • 1/2 c. skim evaporated milk
  • 1/4 c. milk
  • 1 1/2 tbsp. lemon juice
  • 1 tsp. vanilla

Preparation

Step 1

Crust: Melt margarine in saucepan. Stir in graham crumbs and sugar. Press in bottom of ungreased 9" springform pan. Bake in 350 degree oven for about 10 minutes.

Filling: Puree cottage cheese in blender. Turn into bowl. Add sugar and flour. Stir together well.

Beat in cream cheese. Beat in eggs, 1 at a time. Add both milks, lemon juice and vanilla. Mix. Pour over crust. Bake in 350 degrees oven for about 60 to 70 minutes until set around outside. Center will be a bit wobbly when shaken. Run a sharp knife around edge to allow cheesecake to settle evenly. Chill thoroughly.
