Breads: Yeast Bread & Rick's Yeast Rolls

Ingredients
- 3/4 cup warm water
- 3 packages yeast
- 1 1/2 cup lukewarm milk
- 3/4 cup sugar
- 3 t salt
- 3/4 cup shortening
- 3 eggs
- 11 cups flour
- 1 slightly beaten egg
- 1 T water
- Rick's Yeast Rolls
- 2 pkgs dry yeast
- 1/4 cup sugar
- 1 t salt
- 1/2 cup lukewarm water
- 1/2 cup milk, scalded
- 3 eggs
- 1/2 cup melted butter
- 4 1/2 cups plain flour

Preparation
Step 1
Mix water and yeast, set aside
Mix milk, sugar, salt and shortening
When milk is not too warm, combine above mixtures and eggs
Gradually add 11 cups flour
Mix all ingredients and work in flour
When flour is hard to knead, remove and add flour gradually and knead 140-200 times on board
Put in greased bowl i warm place
Cover
Let rise until double in bulk, about 1 hour
Punch down dough with fist
Still adding enough flour to keep from sticking
Knead approximately 75-100 times
The dough can be divided into 2 large or 3 small loaves
If bread is put in loaf pan, bake and then turnover and thump bottom
If sounds hollow, it is done
After dough has been divided and shaped, mix together the slightly beaten egg and water and brush over the bread, adding sesame or celery seed (optional)
Bake in oven 425 degrees for 15 minutes then lower heat to 375 degrees for approximately 30 more minutes or until brown
Rick's Yeast Rolls
Stir yeast in to lukewarm water allow to stand a few minutes and add sugar
Pour hot milk over salt and butter let stand until lukewarm
Add yeast mixture
Beat eggs, adding to mixture, and add enough flour to make soft dough
Knead slightly on flour board
Place in greased bowl and let rise in warm place until double in bulk
Turn on flour board
Knead slightly
Make out in rolls
Brush with butter
Let rise
Bake at 425 degrees for 15 or 20 minutes
