Ingredients
- 3/4 cup skim milk
- 1/4 cup applesauce
- 1/4 cup second nature eggs real egg product
- 2 cups gold medal all purpose flour
- 3/4 cup sugar
- 1 T poppy seed
- 2 t baking powder
- 1/2 t salt
- 1 cup cut up or fresh or frozen without syrup (thawed strawberries)

Preparation
Step 1
Heat oven to 400 degrees
Spray 12 medium muffin cups with cooking spray or place paper cups in muffin cups and spray with cooking spray
Beat milk, applesauce, eggs in a large bowl with fork
Stir in flour, sugar, poppy seed, baking powder and salt until flour is moistened
Gently stir in strawberries
Divide batter evenly among muffin cups (almost full)
Sprinkle with additional sugar if desired
Bake 20-22 minutes or until muffins spring back when touched in center
Cool 5 minutes remove from pan
