Cup O Ravioli Soup

Ingredients
- 12 oz. refrigerated cheese filled ravioli
- 6 oz. shredded rotisserie chicken (1 1/2 cup)
- 6 cups chopped fresh spinach
- 3 Tbsp. minced fresh garlic
- 1 Tbsp. dried Italian seasoning
- 8 cups low-sodium chicken broth
- 1/4 cup purchased basil pesto
- Salt and black pepper to taste

Preparation
Step 1
Bring chicken broth, garlic and Italian Seasoning to a simmer, (just under a boil) in a large pot. Add ravioli and cook until ravioli float and are tender (5-6 minutes).
Add chicken and spinach and cook on a low simmer until chicken is heated through and spinach is wilted, about 5-6 minutes. Add pesto and taste for seasoning, adding salt and pepper to taste and serve.
Top with shredded or shaved parmesan if desired.
