Ingredients
- 1 T oil
- 1 lb boneless skinless chicken breast - cut into bite size pieces
- 6 C baby spinach leaves, washed & dried
- 2 C minute brown rice , uncooked
- 1 1/2 C cherry tomatoes, halved
- 1 C (10 1/2 oz) chicken broth
- 1/4 C parmesan cheese- grated

Preparation
Step 1
Heat oil in large deep skillet on medium heat
Add chicken; cook 10 mins or until chicken is cooked through, stirring frequently.
Add spinach, rice, tomatoes & broth; mix well.
Bring to a boil.
Reduce heat to low; cover.
Simmer10 mins.
Stir in cheese.
Let stand 5 mins.
