Ingredients
- 2 lb small carrots with greens, peeled, tops trimmed and halved crosswise
- 3 tbs whole grain mustard
- 2 tbs olive oil
- 1 tbs honey
- salt, pepper
- 2 tbs minced fresh parsley

Preparation
Step 1
Preheat oven to 400°. Line a baking sheet with aluminum foil.
Toss carrots with mustard, oil and honey. Season with salt and pepper. Arrange carrots in a single layer on prepared baking sheet.
Roast carrots until fork tender 25-30 minutes
Sprinkle carrots with parsley before serving.
