Ingredients
- 1 pound beef cubed steak, cut into 3/4-inch chunks
- 1 tablespoon all-purpose flour
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 8 cups water
- 6 beef bouillon cubes
- 1/2 cup pearled barley
- 3 carrots, shredded
- 1 large onion, diced
- 1 celery stalk, diced

Preparation
Step 1
Sprinkle beef with flour and pepper.
In a 6-quart soup pot, heat oil over high heat, then add beef and brown on all sides 6 to 7 minutes. Add remaining ingredients and bring to a boil, then reduce heat to medium and cook 45 to 50 minutes, or until barley is tender.
