Ingredients

  • 1 cup white rice (Uncle Ben's works great)
  • 1 15oz can tomato sauce ( I use homemade sauce)
  • 1 green bell pepper
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 2 cups water
  • 2 Tbsp oil
  • 1 tsp onion powder
  • other spices are optional: cayenne, chili flake, chili powder, ancho or pasilla chili powder, granulated garlic, paprika and epazote

Step 1

1. In a 4 or 5 quart dutch oven, heat olive oil on medium. Add rice and onion powder and any other spices that you are adding. Cook until light brown, stirring often to avoid burning.
2. When light brown, add tomato sauce, water salt and pepper. Bring to a boil and add the green bell pepper.
3. Cover and simmer until all of the liquid is gone (30-45 min). Stir frequently to keep rice from sticking to the bottom of the pan. When all the liquid is gone, the rice is done.
