Ingredients
- fettuccine noodles – approximately 300 g. broken into about 3 pieces each
- 1 lb. lean ground beef
- 2 tsp. sesame oil
- 1 red pepper, slivered (or yellow)
- 1 cup chopped onion (optional)
- ½ tsp. dried crushed chilies
- 1 tsp. ginger
- 3 garlic cloves, minced
- 14 oz. stewed tomatoes
- 1 tsp. white sugar
- 1 tsp. red wine vinegar
- 1 tsp. ground coriander
- ½ tsp. salt
- ¼ tsp. pepper
- 3 tbsp. soy sauce
- ½ cup peanut sauce

Step 1
Cook fettuccine noodles in boiling water until tender. Drain.
Meanwhile, brown ground beef in wok or frying pan until no pink remains. Add peppers, onions, chilies, ginger and garlic. Stir fry until peppers are tender. Add remaining ingredients. Simmer, uncovered, for 4 to 5 minutes. Add noodles and toss together.
