Ingredients

  • 5 lbs pears
  • 4 c. water
  • 2 c. sugar
  • 8 cinnamon sticks

Preparation

Step 1

Wash pears. Cut into halves or quarters, core and pare.
Treat with lemon juice to prevent darkening.
Drain.
Combine water and sugar in a large sauce pan. Simmer until sugar dissolves, stirring frequently.
Add pears to syrup and cook 5-6 minutes.
Put 2 cinnamon sticks in each hot jar and pack pears into jars leaving 1/2-inch head space.
remove air bubbles using a nonnetallic spatula.
Adjust lids and process pint size jars for 20 minutes or quart size jars for 25 minutes in boiling water bath.
