Chicken & Rice Casserole

Ingredients
- 3/4 C chopped sweet red pepper
- 3/4 C chopped green pepper
- 1/2 C chopped onion
- 1/2 C chopped fresh mushrooms
- 1 garlic clove, minced
- 2 t canola oil
- 2 C uncooked instant brown rice
- 2 C chicken broth
- 1 1/2 C frozen corn , thawed
- 1/4 t salt
- 1/8 t pepper
- 6 boneless skinless chicken breast halves, cooked
- 1/4 C slivered almonds, toasted
- 2 T minced parsley
Details
Preparation
Step 1
In a large skillet, sauté the peppers, onion, mushrooms & garlic in oil until tender.
Stir in the rice, broth ,corn, salt & pepper: bring to a boil.
Transfer to a greased 7 x 11 baking dish.
Top with chicken.
Cover & bake at 350* for 20 - 25 mins or until heated through & rice is tender.
Sprinkle with almonds & pasrley..
