Ingredients

  • 1-1 -1/2 lbs fresh haddock, fillet
  • 4 tbsp butter
  • 2 cups milk
  • 1/2 tsp salt
  • 4 tbsp flour
  • 1/2 tsp dry mustard
  • 1/4 tsp paprika
  • 1/8 tsp pepper
  • 3/4 cup grated cheese

Preparation

Step 1

Lay fillets in well-buttered shallow baking dish. Make sauce by melting butter, then blending in four, with seasonings. Blend flour and butter very well. Add milk in thirds, stirring well after each addition. Cook until smooth and thick. Add grated cheese and let sauce stand, but not cooked, until cheese is melted. Pour this sauce over fish and bake.
