Ingredients

  • 2 servings
  • 2 cod filets (or other white fish) I used 1 Costco cod filet the first time, but it's too thick - try something thinner, with more surface for the crumbs to stick to and adjust cooking time accordingly)
  • 1/4 cup buttermilk
  • Grated zest of 1/2 lemon
  • 1/4 cup panko
  • 1 tbsp. freshly grated parmesan or Zerto four cheese blend
  • 1 tbsp chopped fresh parsley, if you have it
  • 1/2 tsp cajun seasoning
  • Cooking spray

Preparation

Step 1

* Preheat oven to 450 F. Spray a baking sheet lined with parchment or foil with cooking spray and set aside (foil is the preference here).

* Pat fish dry with paper towels and add to a ziplock bag with a pinch of salt and the buttermilk. Let stand for 10 minutes or so (not more than 1/2 hour)

* In another shallow bowl, combine crumbs, parmesan, lemon zest, parsley, cajun seasoning and a pinch of salt. Drizzle with a 1/2 teaspoon or so of olive oil, just to make it stick together.

* Working one piece at a time, remove cod from buttermilk mixture and pat dry to remove extra liquid. Lay on prepared baking sheet and press crumb mixture onto fish, dividing it evenly and making sure it's well-coated with crumbs.

* Bake for 10-15 minutes until fish flakes easily with a fork. Serve hot with lemon wedges on the side. I cooked the cod for 15 but a thinner filet like sole or tilapia should be done in 10 to 12 minutes, basically the time it takes for the crumbs to turn golden brown.
