Classic vanilla pudding

Ingredients

- 1/2 c sugar
- 3 tbsp cornstarch
- 1/8 tsp salt
- 1.5 c milk
- 1/2 c heavy cream
- 2 egg yolks
- 2 tbsp butter
- 1 tsp vanilla
- 3 tbsp instant espresso powder
- or
- 1/2 c dark brown sugar
- or
- 1/4 c cocoa powder
- or
- 2 tsp lemon zest and 2 tbsp lemon juice

Preparation
Step 1
Place a fine sieve over a medium heatproof bowl and set aside. In a medium saucepan, combine sugar, cornstarch, and salt. In a bowl, whisk together milk, cream and yolks. Add to saucepan.
Whisking constantly, cook over medium heat until thick and bubbly, 8-12 minutes. Reduce heat and cook, whisking, 1 minute.
Remove from heat and pour through sieve into bowl. Stir in butter and vanilla until combined.
Press plastic wrap against surface, refrigerate 3 hours or overnight. Whisk before serving.
Variations:
Add espresso with sugar for coffee pudding.
Replace sugar with brown sugar for butterscotch.
Add cocoa powder with sugar for chocolate pudding.
Add lemon zest with sugar and lemon juice into chilled pudding for lemon pudding.
