Grilled Artichokes with Lemon Mayo

Ingredients
- Lemon Mayo
- 1/2 cup mayonnaise
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Dash of hot sauce
- Grilled Artichokes
- 2 large artichokes, rinsed well, top third removed and leaf tips trimmed
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic, minced
- Salt and pepper, to taste

INSTRUCTIONS
1.Combine mayonnaise, lemon zest, lemon juice, Dijon mustard and hot sauce in a mixing bowl. Mix, then cover and store in the refrigerator to be served with grilled artichokes.
2.Place artichokes with their stem side up in a large microwave safe bowl. Drizzle 1 tablespoon of water on artichokes, then cover tightly with plastic wrap.
3.Microwave 8-10 minutes or until just tender and an outer leaf easily pulls out.
4.Remove plastic wrap and let stand until cool enough to handle. Cut artichokes into halves or quarters and discard the inner prickly purple leaves and hairy choke.
5.In a bowl, combine the olive oil, vinegar and garlic. Add artichokes and turn gently to coat. Let stand while heating the grill to medium-high.
6.Remove artichokes from the marinade and place them on the grill. Turn for about 5 minutes until warmed through and lightly charred around the edges.
7.Place on a serving platter and season with salt and pepper to taste. Serve with Lemon Mayo on the side for dipping.
