Peaches with Pecan Shortbread

Ingredients
- 3/4 c. all-purpose flour
- 2 tbsp. finely chopped pecans
- 1 tbsp. granulated sugar
- 1/4 tsp. salt
- 1/2 tsp. ground cinnamon
- dash nutmeg
- 1/4 c. canola oil
- 2 tbsp. cold water
- 2 c. sliced fresh peaches

Step 1
Preheat oven to 425F. In a small bowl, combine flour, pecans, sugar, salt, cinnamon and nutmeg. Stir with a fork to combine evenly. Make a small depression in center of flour mixture and add oil and water. Stir with fork just until a dough forms. Form dough into a ball with hands and flatten. Place dough between 2 sheets of wax paper and roll to 1/8" thick. Use decorate cookie cutters to make 12 cookies. Transfer to a ungreased baking sheet. Bake 8-12 minutes or until lightly browned. Transfer to wire rack to cool. Divide peaches among 4 serving bowls and garnish each with 1 cookie. Store remaining cookies in tightly closed container up to 1 week.
