  • 1 1/2 cups cooked spaghetti (can be left over)
  • 1 cup shredded mozzarella
  • 1/2 cup grated swiss cheese
  • 3 scallions, thinly sliced
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan
  • 3 Tablespoons butter, melted and cooled

Step 1

Preheat oven to 375 degrees and generously mist a 9 inch glass or ceramic pie dish with Pam.Combine spaghetti, mozzarella and swiss cheese in a large bowl, add scallion and toss to blend. in a small bowl beat the eggs with milk until blended. pour over spaghetti. Season with salt and pepper. Mix well and pour into baking dish.
Combine panko and parmesan in a small bowl. Add melted butter, toss with a fork to coat crumbs. Spread over the top of the spaghetti mixture. Bake about 25 minutes until golden brown. Let stand 5 minutes. Cut into wedges to serve.
