Ingredients

  • 4 loin pork chops, 1-inch thick
  • Salt and pepper, to taste
  • 3 Tblsp olive oil, divided
  • 1 medium yellow onion, chopped
  • 1 Tblsp fresh thyme, chopped
  • 1 sprig fresh rosemary, chopped
  • 3 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 2 Tblsp honey
  • 1 cup chicken broth
  • 2 Tblsp unsalted butter

Preparation

Step 1

Heat 2 Tblsp oil in a large sauté pan on medium heat. Season the chops with salt and pepper, then add to skillet. Cook 5-7 minutes per side. Remove pan from heat.

Transfer the chops to a platter, tent with foil to keep warm. Return pan to heat, adding remaining Tblsp oil, onions, thyme rosemary, and garlic. Sauté for 4 to 5 minutes, until onions are translucent. Add balsamic vinegar, honey, and chicken stock. Cook until the liquid is reduced by half.

Once the balsamic glaze has reduced by half, remove the pan from the heat, and add the butter. Stir until the butter melts, then return chops to pan, to cover with glaze. Serve.
