Ingredients

  • Bottom Crust:
  • 1 1/2 cubes butter
  • 1/2 cup powdered sugar
  • 1/2 tsp. lemon zest
  • 1 1/2 cups flour
  • Lemon Filling:
  • 1 1/4 cups sugar
  • 3 eggs
  • 2-3 Tablespoons lemon juice from Fresh Lemon
  • 1/2 tsp. lemon zest
  • 3 Tablespoons flour
  • Raspberry Sauce – (make ahead)
  • Yields 2 cups

  • 1 pint fresh raspberries
  • 1/4 cup white sugar
  • 2 tablespoons orange juice
  • 2 tablespoons cornstarch
  • 1 cup cold water

Step 1

Lemon bars:
Blend and pat first Four ingredients into a 9x12" pan. Bake at 350 for 15-20 minutes. Mix remaining ingredients by hand until blended and pour on hot cookie crust. Bake for 20 minutes longer. Sprinkle with powdered sugar while still hot. Cool and cut into squares. Drizzle with Raspberry Sauce (Optional) See recipe below.

Raspberry Sauce Directions
1. Combine the raspberries, sugar, and orange juice in a saucepan. Whisk the cornstarch into the cold water until smooth. Add the mixture to the saucepan and bring to a boil.

2. Simmer for about 5 minutes, stirring constantly, until the desired consistency is reached. The sauce will thicken further as it cools.

3. Puree the sauce in a blender or with a handheld immersion blender and strain it through a fine sieve. Serve warm or cold. The sauce will keep in the refrigerator for up to two weeks.
