Caramelized Pineapple w/Coconut Ice Cream & Chocolate Ginger Sauce
Every step of this dessert is a cheat, but you'd never know it. Those wiggly packaged chocolate sticks or thin chocolate wafers would be an attractive garnish.

Ingredients
- 1/4 tsp (1 mL) ground ginger
- 1 tbsp (15 mL) dark rum (optional)
- 2 tbsp (25 mL) chocolate sauce
- 1/3 precored and peeled fresh pineapple
- 2 tbsp (25 mL) each butter and brown sugar
- Coconut, vanilla or coffee ice cream
- 1/4 cup (50 mL) sweetened flaked coconut, toasted
- Mint leaves (optional)

Step 1
1. Stir ginger and rum into chocolate sauce.
2. Cut pineapple into 12 wedges. Melt butter in a large frying pan over high heat. Add pineapple wedges and brown sugar. Stirring frequently, cook until pineapple has softened and is deep golden brown, 3 to 5 minutes. Leave in pan (this can be done in advance, heat before using).
3. Drizzle chocolate sauce in a zigzag pattern on each large dessert plate. Arrange pineapple wedges so they are stacked slightly. Scoop ice cream onto plate near to pineapple and sprinkle with coconut. Garnish with mint.
