Ingredients
- 1 1/2 pounds carrots, peeled and trimmed
- 1/3 cup lemon juice, fresh
- 2 tsp Dijon mustard
- 1 tsp sugar
- 1 tbsp olive oil
- 1/4 tsp pepper
- 3/4 cup green onions, chopped
- 1/4 cup parsley, fresh, minced

Step 1
Cut carrots into thin strips 2 to 2 1/2 inches long. Blanch carrots in boiling water until tender, 3 to 4 minutes. Drain well. Whisk together lemon juice, mustard and sugar. Gradually whisk in olive oil; add pepper. Toss carrots with dressing; mix in green onions and parsley. Salad may be served at room temperature immediately or chilled.
