Ingredients

  • 6 chicken thighs or legs
  • 1 lb pork
  • 1 lb lamb
  • 2-3 carrots
  • 2 turnips
  • 1 leek (optional)
  • 1 large onion cut chunks
  • 1 celery stalk
  • 2 large cans garbanzos (drained)
  • 2 large tomatoes (peeled) chopped or stewed tomatoes.
  • parsley...garlic
  • 1-2 zuchinni cut in 1 " rounds peeled
  • 2 tbsp cumin
  • 1 tbsp paprika
  • 1 large bay leaf
  • pinch of coriander
  • pinch of saffron
  • pinch thyme, pinch salt, pinch pepper..
  • 2 about 2 tbsp olive oil to brown the meat.
  • Harrisa
  • 1 tbsp cayenne pepper
  • 1 tbsp cumin
  • 1 1/2 Soup scoup of bouillon. Stir. Boil 2 min.
  • Makes a lot of harrisa. If making a portion for 2....cut in half..

Preparation

Step 1

In large pot put olive oil and brown chicken and onion till golden.
Put chicken and onion aside.
Brown pork and if you have lamb. Add cumin, paprika, bay leaf, coriander, saffron, thyme, salt, pepper. Mix well. Simmer 3 minutes while stirring.
Add carrots, turnips, celery, leek?? tomatoes.
Cover with 2" over the top of food with water uncovered.
Boil hard 30 min - 45 min, till veggies are cooked. May need to add boiling water. Keep 2-3 " above top of veggies and meats.
Reduce to medium low and add chicken, onion. Cover.
Cook 30 min, till chicken is done.
Add zucchini, cook 15 min then add garbanzos. Cook another 15 min.
Use 1 lb couscous for 5-6 people.
Put couscous in large bowl. Add bouillon 1-2 soup scoops till absorbed, add half tsp butter or oil to keep cous cous from sticking.
