Fave con Pecorino

This simple "salad" is a wonderful way to enjoy the fresh, spring flavor of fava beans. Fava beans and fresh pecorino cheese are a classic Italian preparation. Be sure to use a very young pecorino - the stuff for grating is not appropriate here. Serve with bread or by itself with a splash of lemon juice.

Ingredients
- 4 lb fresh, young favas
- 2-4 oz young pecorino
- best quality extra-virgin olive oil
- sea salt, to taste
- 1 lemon, quartered, optional
- 1 loaf crusty Italian farmhouse bread. optional

Preparation
Step 1
Shell, blanch, and re-shell the favas. Cut the cheese into small cubes. Season favas with salt and drizzle with oil. Add cheese to favas and toss. Serve at room temperature with lemon wedges and slices of bread optionally.
