Ingredients
- Never salt and pepper chicken before frying. Season chicken after removing from skillet.
- Combine 1 egg and 1 T. water. Beat lightly. Place chicken in egg mixture to sit while you are heating the skillet.
- Use just enough oil so when the chicken is placed in the skillet, oil does not come up over halfway on the pieces. Make sure oil is very hot.
- Put a generous amount of flour into a paper bag. Place chicken pieces in sack and shake vigorously, holding top securely. Place in skillet.

Step 1
Allow chicken to brown at least one minute, then turn and brown on the other side. (Use tongs, not a fork). Place lid on skillet and reduce heat to medium. Cook 10 minutes on one side, turn and cook 10 minutes more. Remove lid, turn heat to high and cook one minute more.
Drain chicken on paper towels at least one minute. Season if desired.
